Slow cooker chicken parmigiana
Tender chicken in rich marinara, finished with melted mozzarella, Parmesan, and golden breadcrumbs added at the end so they stay crisp.
Traditional chicken parmigiana depends on a crisp fried coating. A slow cooker creates moist heat, so breading the chicken at the beginning usually produces a soft coating. This version solves that problem by cooking the chicken directly in the sauce, then adding toasted breadcrumbs just before serving.
How to make it
- Season the chicken. Pat the chicken dry. Sprinkle both sides with Italian seasoning, garlic powder, salt, and pepper.
- Build the sauce layer. Spread about 1 cup of marinara across the bottom of a 4- to 6-quart slow cooker. Arrange the chicken in one layer and spoon the remaining sauce over the top.
- Cook gently. Cover and cook on low for 3–4 hours. Begin checking early if the chicken breasts are thin or your slow cooker runs hot. The thickest part of every piece must reach 165°F.
- Add the cheese. Sprinkle mozzarella and Parmesan over the chicken. Cover for another 10–15 minutes, just until the cheese melts.
- Make the crisp topping. While the cheese melts, heat olive oil in a skillet over medium heat. Add panko and stir for 3–4 minutes until golden. Sprinkle it over each serving, then add basil if desired.
Tips that make it better
Keep the chicken in one layer
Overlapping pieces cook unevenly. If the breasts are very thick, slice them horizontally into thinner cutlets before seasoning.
Do not add extra liquid
Chicken releases moisture as it cooks. Marinara provides enough liquid and produces a richer sauce than adding broth or water.
Use low-moisture mozzarella
Fresh mozzarella releases more water and can thin the sauce. Shredded low-moisture mozzarella melts evenly without making the dish soupy.
Serving ideas
Serve the chicken and sauce over spaghetti, penne, creamy polenta, or garlic mashed potatoes. For a lighter plate, pair it with roasted broccoli, green beans, or a crisp salad.

Refrigerate leftovers in a covered shallow container within two hours. Keep the toasted breadcrumbs separate so they stay crisp. Reheat the chicken and sauce until steaming hot, then add fresh breadcrumbs after reheating. Use refrigerated leftovers within 3–4 days.
